| Dry noodles | 170g |
| Eggs, lightly beaten | 4 |
| Cheese, grated | ¾ cup |
| Zucchini, grated | 2 |
| Olive oil spray | As needed |
Method

Cook noodles as per the instructions on the packet, drain and put in a large bowl. |

Stir through eggs, cheese and zucchini. |

Heat a non-stick frying pan over a medium heat. Spray with oil and cook ¼ - ½ cup of mixture for 1 - 2 minutes each side until golden. |

Drain on paper towel. These will keep overnight in the fridge. |
