| Butter | 1 tablespoon |
| Salt | ¼ teaspoon |
| Egg | 1 |
| Mashed pumpkin | 1 cup |
| Self raising flour | 1 ½ cups |

Preheat oven to 200°C. Line a baking tray with baking paper. |

Beat the sugar, butter and salt together using an electric mixer. |

Add egg and beat together. |

Use a spoon to stir through the mashed pumpkin and self raising flour. Once combined, put onto a floured surface and knead dough lightly. Add extra flour if needed. |

Use a rolling pin to roll dough to 2cm thick. Use a cookie cutter or glass to cut into rounds, approximately 5cm diameter. |

Place the scones together on the prepared baking tray. Bake in preheated oven for 15 minutes. |
