| Very ripe banana, mashed | 1/2 cup |

Method

Mash the banana with a fork in a medium bowl. Crack the eggs into the same bowl and stir together. If using, stir through the baking soda. The batter will be runny. |

Place a frying pan over a medium heat and spray with oil to lightly cover the base. |

Place 1 tablespoon of batter into the heated pan to make small pancakes. The batter should make a total of 10 mini pancakes. |

Cook until the edges start to set, and the bottom is lightly browned, about 1 minute. |

Flip carefully using a spatula and cook for another 1 minute. |

Remove from the pan and serve with suggested toppings or plain. |
