| Grated tasty cheese | 2 cups |
| Spring onions, finely sliced | 2 |

Method

Preheat the oven to 180°C. Put a baking tray of water in the bottom of the oven - the steam will help with cooking the eggs. |

Spray a 12-hole muffin tray generously with spray oil (see note). |

In a large bowl, whisk together the eggs, cottage cheese, grated tasty cheese, finely sliced spring onions, salt and pepper. (For a fluffier texture, mix eggs and cottage cheese together in a blender before stirring in other ingredients). |

Pour the mixture into the prepared muffin tins until half full. |

Bake in the preheated oven for 30 minutes or until eggs are cooked through. Remove from the tray and serve. |
