| Chicken breast, sliced into thin strips | 375g |
| Spring onions, finely sliced | 2 |
| Tomatoes, finely chopped | 1 |
| Red capsicums, finely chopped | 1 |
| Corn kernels | 1/2 cup |
| Ground paprika | 2 tsp |
| Grated cheese | 1 cup |
| Tortillas (or wraps) | 5 |
| Extra virgin olive oil | As needed |
Method

Heat a little extra virgin olive oil in a large frying pan over a medium heat. Cook the chicken breast strips in batches until lightly golden and cooked through. Transfer to a large mixing bowl. |

Add the finely sliced spring onions, finely chopped tomatoes and red capsicums, corn kernels and ground paprika to the cooked chicken strips. Mix well to combine. |

Fill one side of the tortilla with the mixture, sprinkle with grated cheese and fold in half. |

Place the folded tortilla in a sandwich press for a few minutes until golden brown -the cheese should be melted and mixture warmed through. Quesadillas can also be cooked in the oven- bake for 5 minutes on each side or until golden brown. |
