| Grated cheese | 1 cup |
| Dried oregano | 1 teaspoon |

Preheat oven to 180ºC. |

Use olive oil spray to grease a muffin tin. |

In a medium bowl, whisk the eggs together. |

Add the cooked rice, grated cheese and dried oregano. Stir to combine. |

Spoon the mixture into 5 holes of the greased muffin tin. |

Bake in preheated oven for approximately 25 minutes, or until a skewer inserted into the middle comes out clean. |

Allow to cool slightly before eating. |
