| Cauliflower florets | 3 cups (half a large cauliflower) |
| Grated cheese | 1 cup |
| Eggs | 2 |
| Dried herbs or fresh herbs (dried oregano, fresh parsley, basil or chives) | 2 teaspoons dried or 2 tablespoons fresh |
Method

Preheat oven to 180ºC. |

Use olive oil spray to grease a mini muffin tin. |

Steam cauliflower florets in the microwave or saucepan for 5 minutes or until softened. Allow to cool slightly and drain any excess liquid. |

Use a food processor to blitz for 10 seconds or until cauliflower is in small pieces (like rice). |

Add to a bowl with grated cheese, eggs and dried/fresh herbs. Mix well to combine. |

Spoon mixture into mini muffin tin. |

Bake in preheated oven for 15-20 minutes or until golden and cooked through. Cool in the tin for a few minutes before removing. |
