| Ground cinnamon | 1 teaspoon |
| Sultanas | ¼ cup |
| Apple, grated or diced | ½ cup |
| Eggs | 2 |
| Milk | ¼ cup |
| Vegetable oil | 2 tablespoons |
| Apple puree | ½ cup |
| Natural yoghurt | ½ cup |
| Vanilla | ½ teaspoon |
Method

Preheat an oven to 180°C. |

Spray a muffin tin or line with muffin cases. |

Combine self raising flour, rolled oats, ground cinnamon, sultanas and chopped apple in a medium bowl. |

In another bowl, whisk together the eggs, milk, vegetable oil, apple puree, natural yoghurt and vanilla. |

Pour the wet ingredients into the dry ingredients and stir until just combined. |

Spoon the mixture into the muffin tin. |

Bake for approximately 25 minutes until a skewer inserted into the middle comes out clean. |

Allow to cool slightly before eating. Muffins will keep in an airtight container for a few days. |
