Grilled mushrooms with a garlic yoghurt dressing

Try as a warm side dish or hearty snack that is low GI, high in dietary fibre, protein and many of the B group vitamins


1Tablespoon (Metric)reduced salt dairy spread
1CloveGarlic (crushed)
4 large field mushrooms
1Cuplow-fat yoghurt
1⁄2 red capsicum (diced)
2Tablespoon (Metric)fresh parsley (chopped)
1Pinchpepper (to season)


  1. Heat dairy spread and half the garlic in a frypan until melted. Add mushrooms and saute for 2-3 minutes.
  2. Remove from frypan and place under a hot grill and cook for a further 5 minutes or until tender.
  3. Combine yoghurt, red capsicum, parsley and remaining garlic and season to taste.
  4. Top mushrooms with yoghurt dressing and serve.
