Citrus chicken salad

This is a great dish for summer picnics or outdoor eating. Vary the ingredients with whatever is in season.


375GramChicken (cooked skinless fillets cut into strips)
1Cupcooked pasta or noodles
4 Shallots (diced)
150GramSnow Peas (blanched)
1⁄2 capsicum (red sliced)
2 oranges (1 cut into pieces and 1 for juice)
1⁄2Cuppecans (chopped)
1Teaspoonreduced salt soy sauce
  freshly ground pepper (to taste)


  1. Place chicken, pasta/noodles, shallots, snow peas, capsicum, orange pieces and pecans in a salad bowl.
  2. Toss to combine.
  3. Combine orange juice and soy sauce together in a small bowl.
  4. Pour over salad and toss to coat ingredients.
  5. Season to taste with pepper.
  6. Refrigerate until ready to serve.
